Grilled Cotija Corn On The Cob



  • 1/2 cup unsalted butter, softened
  • 1/4 cup minced cilantro
  • 1 tablesppon lime juice
  • 1-1/2 teaspoons grated lime peel
  • pinch of salt
  • 8 ears sweet corn, husks removed
  • grated cotija cheese
  • 1/2 cup mayonoise


  • In a small bowl, mix butter, cilantro, lime juice, lime peel, and a pinch of salt.
  • Coat the husked corn with the cilantro lime butter.
  • Grill corn over medium heat for 20-25 minutes or until tender.  Occasionally turning and coating with the remaining cilantro lime butter.
  • Remove the corn from the grill.
  • Coat corn with a thin layer of mayonise.
  • Roll each ear of corn in cotija cheese.
  • Serve and Enjoy!
